"Amanda Archibald has a unique way of teaching people about food, food choice and nutrition. In her mind, people do not eat nutrients – they eat food. Nutrition is an added benefit of eating delicious food, but it is food that is the platform from which we must teach. After attending two of Amanda’s workshops, we have changed the way we teach nutrition at Utah State University. We have put a much greater emphasis on teaching students about food and flavors and the role food and flavor play in achieving a nourishing lifestyle. Our students’ experiences are forever changed as a result of her inspirational style and her innovative ways of thinking. We learned, and our students in turn have learned, what it takes to educate future generations of Americans about the simple, yet complex, world of food."
